- 400 g Tin Gooseberries
- 100 g Plain flour
- 50 g Rolled oats
- 75 g Unsalted butter, chilled and diced
- 75 g Caster sugar
- 1 tsp Vanilla extract
- A pinch of ground cinnamon (optional)
- Vanilla custard or cream, to serve
Instructions
- Preheat Oven – Set your oven to 180°C (160°C fan) or gas mark 4.
- Drain the gooseberries from the tin and spread them evenly in a medium-sized ovenproof dish. Add the vanilla extract and gently stir to combine.
- In a large bowl, mix the flour and oats. Add the chilled diced butter and rub it into the dry ingredients using your fingertips until the mixture resembles coarse breadcrumbs. Stir in the caster sugar and cinnamon if using.
- Evenly distribute the crumble mixture over the gooseberries, ensuring all the fruit is covered.
