Instructions

  • Prepare the salmon: Remove the salmon from the fridge approximately 15 minutes before cooking. Pat thoroughly dry and season lightly with sea salt and white pepper.
  • Make the glaze: Combine the Chiu Chow Chilli Oil, soy sauce, honey, Shaoxing wine, rice vinegar, sesame oil, garlic, ginger and water. Keep the lime juice separate until the end.
  • Sear the salmon: Heat a large frying pan over medium-high heat and add the neutral oil. If using skin-on salmon, place skin-side down and gently press for the first 20–30 seconds. Cook for approximately 4–5 minutes until the skin is crisp.
  • Turn the salmon carefully and cook for another 1–2 minutes. Transfer temporarily to a plate.
  • Create the sticky glaze: Reduce the heat to medium and pour the prepared Chiu Chow sauce into the same pan. Allow it to bubble for 1–2 minutes until glossy and slightly reduced.
  • Return the salmon to the pan and spoon the bubbling glaze repeatedly over each fillet for 30–60 seconds. Remove from the heat and stir the fresh lime juice into the sauce.
  • Make the finishing oil: Combine 1 tablespoon Chiu Chow Chilli Oil with the fresh lime juice and lime zest.
  • Finish and serve: Spoon a small amount of chilli-lime finishing oil over the salmon. Garnish with spring onions, toasted sesame seeds, coriander, fresh chilli and lime wedges. Serve immediately.

Notes

Chef’s Tips: Stir the Chiu Chow Chilli Oil before measuring so you capture both the aromatic oil and chilli-garlic solids. Do not overcook the salmon. Reduce the sauce into a glaze rather than simmering the fish for a long period. Add lime juice at the end to preserve its fresh citrus flavour. Taste before adding extra salt because the soy sauce and chilli oil already provide significant savouriness.
Air-Fryer Variation: Air fry lightly oiled salmon at 190°C for approximately 7–10 minutes depending on thickness. Reduce the glaze separately, brush over the salmon and return to the air fryer for another 1–2 minutes until lacquered.
Serving Suggestion: Serve with steamed jasmine rice, egg fried rice or noodles to capture the spicy Chiu Chow glaze.

Chef’s Notes for Exceptional Chiu Chow Chilli Oil Salmon

This dish comes together quickly, but the difference between a good salmon dinner and a restaurant-quality plate lies in the details. These professional techniques will help you achieve better caramelisation, a succulent centre and a glossy, balanced chilli-soy glaze.

01
Preparation

Start with Completely Dry Salmon

Pat the salmon thoroughly dry before seasoning. Removing excess moisture allows the surface to sear rather than steam, helping you achieve better colour and crisper skin.

02
Temperature

Keep the Centre Succulent

Do not fully cook the salmon during the first sear. The fillet receives additional heat when it returns to the pan for glazing, so leaving the centre slightly under at first helps preserve its tender texture.

03
Flavour

Stir the Chiu Chow Chilli Oil Before Using

Make sure your spoon captures both the aromatic oil and the chilli-rich solids. Those concentrated pieces deliver much of the savoury, garlicky character that makes the glaze so distinctive.

04
Glazing

Reduce the Sauce Before Returning the Fish

Let the chilli-soy mixture become glossy and slightly syrupy before the salmon goes back into the pan. The aim is to lacquer the fish with concentrated flavour, not simmer it in excess liquid.

Serve It Beautifully

What to Serve with Chiu Chow Chilli Oil Salmon

The salmon has a concentrated chilli-soy glaze, so the best accompaniments are simple, elegant and able to absorb the sauce without competing with it.

Classic Pairing

Steamed Jasmine Rice

Fragrant jasmine rice is the ideal partner for the sticky glaze. It absorbs the chilli-soy sauce while keeping the overall plate balanced and refined.

More Indulgent

Egg Fried Rice

For a more substantial meal, serve the salmon with lightly seasoned egg fried rice. Keep the flavours restrained so the fish remains the star of the plate.

Noodle Option

Sesame Noodles

Toss soft noodles with sesame oil, spring onion and a small spoonful of Chiu Chow chilli oil for a cohesive, aromatic accompaniment.

Restaurant-Style Presentation

Plate the Salmon with Confidence

A clean presentation allows the glossy salmon and vivid garnishes to do the visual work.

Spoon a narrow line or small pool of reduced chilli-soy glaze onto a wide white or dark ceramic plate.

Position the salmon slightly off-centre, then spoon just enough glaze over the top to create a glossy lacquer while still allowing the natural colour of the fish to remain visible.

Finish with toasted sesame seeds, finely sliced spring onion, fresh red chilli, coriander and a little lime zest.

Add a fresh lime wedge alongside for colour and an optional final burst of acidity.

Alternative Cooking Method

Air-Fryer Chiu Chow Chilli Oil Salmon

Prefer using an air fryer? You can still achieve a glossy, caramelised finish with very little effort.

01

Lightly oil the salmon and air fry at 190°C for approximately 7–10 minutes, depending on the thickness of the fillets.

02

Meanwhile, reduce the Chiu Chow chilli glaze in a small saucepan until glossy and concentrated.

03

Brush the salmon generously with the glaze and return it to the air fryer for another 1–2 minutes.

04

Finish with fresh lime, spring onion, toasted sesame and coriander immediately before serving.

One Ingredient, More Possibilities

More Ways to Cook with Chiu Chow Chilli Oil

Once opened, this is the kind of pantry ingredient that quickly becomes part of regular cooking. Its savoury chilli character works beautifully across seafood, meat, noodles and plant-based dishes.

01

King Prawns

Sear large prawns over high heat and toss through the reduced chilli glaze immediately before serving.

02

Sticky Chicken

Roast or pan-fry chicken thighs and coat them in the same chilli, soy, garlic and ginger glaze.

03

Crispy Beef

Toss crisp beef strips through a concentrated Chiu Chow glaze for a glossy, intensely savoury finish.

04

Crispy Tofu

Coat crisp tofu cubes with the glaze for a satisfying meat-free variation.

Plantain, Salted Caramel & Pecan Praline Cake

A show-stopping Michelin-inspired celebration cake where caramelised ripe plantain, nutty brown butter, silky vanilla mascarpone, salted plantain caramel and crisp pecan praline come together in one unforgettable dessert.

Celebration Cake Ripe Plantain Recipe Modern Tropical Pâtisserie Created by Nicol Retailer Limited
A Celebration of Ripe Plantain

The Plantain Cake Designed to Steal the Show

There are cakes created simply to satisfy a sweet craving, and then there are cakes designed to become the centrepiece of the table. This Plantain, Salted Caramel & Pecan Praline Cake belongs firmly in the second category.

Sweet roasted plantain is transformed into a beautifully moist brown-butter sponge, layered with cool vanilla mascarpone and luxurious salted plantain caramel before being crowned with glossy caramelised plantain and crisp pecan praline.

Every element has been designed to provide contrast: soft sponge, cool cream, sticky caramel and irresistible praline crunch.

★ Star Ingredient From Everyday Ingredient to Extraordinary Dessert

Fresh Ripe Plantain

Beautifully ripe plantain is the foundation of this cake. As plantain ripens, its texture becomes softer and its flavour develops a wonderfully mellow sweetness that lends itself naturally to baking.

For the best result, choose plantains with deeply yellow skins and generous brown or black markings. Roasting them before blending concentrates their natural sweetness and develops rich honeyed and caramel-like notes.

The result is a cake with genuine plantain character rather than simply sweetness — warm, aromatic and distinctly tropical.

Shop Fresh Ripe Plantain
Why It Works

Why Ripe Plantain Is Brilliant for Baking

01

Natural Sweetness

Fully ripe plantain delivers mellow sweetness and caramel-like depth without making the finished cake taste excessively sugary.

02

Moist, Tender Crumb

Its naturally creamy texture contributes moisture and richness, helping create a beautifully tender sponge.

03

Exceptional Caramel Flavour

Roasting develops toffee-like notes that pair exceptionally well with brown butter, vanilla, sea salt and toasted pecans.

Inside the Cake

Four Layers of Flavour & Texture

01

Caramelised Plantain & Brown Butter Sponge

Roasted plantain and nutty brown butter create a deeply aromatic sponge enhanced with subtle cinnamon, vanilla and nutmeg.

02

Silky Vanilla Mascarpone

Cool mascarpone provides a creamy, elegant contrast to the rich sponge without overpowering the flavour of the plantain.

03

Salted Plantain Caramel

Classic salted caramel is enriched with ripe plantain purée, creating a glossy sauce with additional fruit and caramel complexity.

04

Toasted Pecan Praline

Crisp caramelised pecans provide the essential crunch that balances the soft sponge, creamy filling and silky caramel.

Taste Profile

Rich, Nutty, Caramelised — Yet Beautifully Balanced

The first flavour is deep caramelised plantain, followed by toasted brown butter and vanilla. The mascarpone adds cool creaminess, while sea salt sharpens the caramel and roasted pecans provide a final crisp, nutty finish.

To Finish

Instructions

  • Roast the plantain: Preheat the oven to 200°C / 180°C fan. Place the sliced plantain on a lined baking tray with the butter, dark brown sugar, vanilla, cinnamon and sea salt. Roast for 15–20 minutes until deeply golden, soft and caramelised. Blend until smooth and allow to cool.
  • Brown the butter: Place the 200g butter for the sponge in a saucepan over medium heat. Allow it to melt and foam until the milk solids turn golden brown and develop a toasted, nutty aroma. Remove immediately from the heat and cool slightly.
  • Prepare the cake tins: Reduce the oven to 180°C / 160°C fan. Grease and line two 20cm round cake tins.
  • Make the sponge: Whisk the light brown sugar with the cooled brown butter. Beat in the eggs one at a time, then mix in 250g cooled plantain purée and the vanilla.
  • Combine the self-raising flour, ground almonds, baking powder, cinnamon, nutmeg and salt. Fold gently into the wet mixture, alternating with the milk. Divide evenly between the prepared tins.
  • Bake: Bake for 30–35 minutes, or until risen and a skewer inserted into the centre comes out clean. Cool in the tins briefly, then transfer to a wire rack and cool completely.
  • Make the pecan praline: Toast the pecans at 180°C for 6–8 minutes. Melt the caster sugar in a saucepan until deep amber. Add the toasted pecans and sea salt, then immediately pour onto baking parchment. Cool completely. Break some into decorative shards and crush the remainder into coarse praline crumbs.
  • Make the salted plantain caramel: Melt the caster sugar in a heavy saucepan until amber. Carefully add the warm cream. Whisk in the butter, plantain purée, vanilla and sea salt. Cook briefly until smooth and glossy, then allow to cool.
  • Prepare the mascarpone filling: Whisk the mascarpone, double cream, icing sugar and vanilla bean paste until smooth and thick enough to hold soft peaks. Do not over-whip. Keep chilled until required.
  • Caramelise the topping: Melt the butter and dark brown sugar in a frying pan. Add the diagonally sliced plantain and cook for 1–2 minutes on each side until deeply golden and glossy. Add the vanilla, remove from the heat and cool.
  • Assemble: Place the first sponge on a cake stand. Spread with a generous layer of vanilla mascarpone, drizzle lightly with salted plantain caramel and scatter with pecan praline crumb. Position the second sponge on top.
  • Spread mascarpone across the top, leaving the sides semi-naked for a contemporary finish. Arrange the caramelised plantain slices in a sweeping crescent, drizzle with plantain caramel and add pecan praline shards for height. Finish with crushed praline and optional edible gold leaf.

Notes

Chef’s Tips

Use Very Ripe Plantain: Choose ripe yellow plantains with plenty of brown or black markings. The riper the plantain, the sweeter, softer and more intensely caramelised the finished cake will taste.
Roast the Plantain for Maximum Flavour: Roasting the plantain before blending concentrates its natural sugars and develops rich caramel notes. Allow the roasted plantain purée to cool completely before adding it to the cake mixture.
Brown the Butter Carefully: Cook the butter gently until it becomes golden and develops a rich, nutty aroma. Remove it from the heat as soon as the milk solids turn golden to prevent burning. Brown butter pairs beautifully with ripe plantain and pecan.
Keep the Sponge Light and Tender: Once you add the flour, fold the mixture gently and only until combined. Overmixing can produce a dense cake rather than a soft, tender crumb.
Cool the Cake Completely: Make sure both plantain sponge layers are completely cool before adding the mascarpone filling. Warm cake can cause the filling to soften or melt.
Do Not Over-Whip the Mascarpone: Keep the mascarpone and double cream chilled. Whip only until the mixture is smooth and holds soft, stable peaks. Over-whipping can make the filling grainy.
Cool the Plantain Caramel: Allow the salted plantain caramel to cool before assembling the cake. Warm caramel can soften the mascarpone and cause the cake layers to slide.
Keep the Pecan Praline Crisp: Prepare the praline in advance, but add the decorative shards shortly before serving. Exposure to the mascarpone and caramel will gradually soften the praline.
Chill Before Decorating: For a professional finish, chill the assembled cake for approximately 30–60 minutes before adding the caramelised plantain, praline and final decorations.
For Clean Slices: Use a large, sharp knife dipped in hot water and wiped dry before each cut. This creates neat, restaurant-style portions.

Vegan Variation

To make a vegan plantain, salted caramel and pecan praline cake, replace the dairy butter with a good-quality vegan block butter suitable for baking.
Replace the whole milk with unsweetened oat, almond or coconut milk.
For the eggs, use a reliable vegan egg replacer according to the manufacturer’s instructions. A plant-based yoghurt designed for baking can also work, although the texture of the finished sponge may differ slightly from the original recipe.
Replace the mascarpone and double cream with vegan mascarpone or plant-based cream cheese and a plant-based whipping cream.
For the salted plantain caramel, use vegan butter and a plant-based cream. Coconut cream is particularly delicious with plantain because it enhances the cake’s tropical flavours.
The pecan praline can remain unchanged when made with pecans, sugar and sea salt.
Always check the labels of chocolate, decorations and other finishing ingredients if you require the entire cake to be suitable for a vegan diet.

Gluten-Free Variation

To make a gluten-free plantain cake, replace the self-raising flour with the same quantity of a good-quality gluten-free self-raising flour blend suitable for cakes.
If your gluten-free flour blend does not already contain xanthan gum, add approximately ½ teaspoon xanthan gum to improve the structure and reduce crumbling.
The ground almonds in the original recipe help retain moisture and create a tender crumb, making this cake particularly suitable for gluten-free adaptation.
Check the baking powder, vanilla extract, icing sugar, caramel ingredients and decorations to ensure they are suitable for a gluten-free diet.
If preparing the cake for someone with coeliac disease, take appropriate precautions to prevent cross-contamination from flour, utensils, baking tins, worktops and other ingredients.

Vegan & Gluten-Free Variation

The cake can also be prepared both vegan and gluten-free.
Use vegan block butter, plant-based milk, an appropriate vegan egg replacement, vegan mascarpone or plant-based cream cheese, plant-based whipping cream and gluten-free self-raising flour.
Add xanthan gum if it is not already included in your gluten-free flour blend.
Because replacing both eggs and wheat flour changes the structure of the cake, handle the sponge gently and allow it to cool completely before removing it from the tins. Chilling the layers before assembling the cake will make them easier to handle.

Allergen Note

This recipe contains nuts, eggs, milk and gluten in its standard form. Dietary substitutions can change the allergen profile, but always check individual product labels carefully. If preparing the cake for someone with an allergy, intolerance or coeliac disease, use ingredients appropriate to their dietary requirements and take suitable precautions against cross-contamination.

Chef’s Secrets for an Exceptional Plantain Cake

Creating a memorable Plantain, Salted Caramel & Pecan Praline Cake is about more than following the recipe. These professional baking techniques help develop deeper plantain flavour, a beautifully tender sponge, stable layers and a polished celebration-cake finish.

01
Ingredient Selection

Start with Properly Ripe Plantain

Choose plantains with deep yellow skins and generous brown or black markings. As plantain ripens, its flavour becomes naturally sweeter, softer and more aromatic, making it ideal for cakes and caramelised desserts.

02
Flavour Development

Roast the Plantain Before Blending

Roasting concentrates natural sugars and encourages caramelisation. It also reduces excess moisture, creating a more intensely flavoured plantain purée and a better-balanced sponge.

03
Brown Butter

Take the Butter to a Deep Hazelnut Gold

Cook the butter gently until the milk solids turn golden and develop a rich toasted aroma. Brown butter reinforces the caramel notes of ripe plantain and brings sophisticated depth to the sponge.

04
Sponge Texture

Fold Gently for a Tender Crumb

Once the flour has been introduced, fold only until incorporated. Overmixing can create a heavier sponge and reduce the delicate texture that makes this celebration cake feel luxurious.

05
Cake Assembly

Cool Every Component Completely

The cake layers, plantain purée and salted caramel should be fully cool before assembly. Warm components can soften the mascarpone and cause beautifully built layers to move.

06
Mascarpone Filling

Stop Whipping at Soft, Stable Peaks

Keep mascarpone and cream cold and avoid excessive whipping. The ideal filling should be smooth, light and stable enough to hold its shape without becoming grainy.

07
Salted Caramel

Use Caramel with Restraint Between Layers

A modest drizzle gives plenty of flavour while helping the cake remain stable. Save the more generous salted plantain caramel finish for the top of the cake and individual serving plates.

08
Final Decoration

Add Pecan Praline Just Before Serving

Praline gradually absorbs moisture from mascarpone and caramel. Add the decorative shards close to serving time so they stay crisp, glossy and beautifully dramatic.

Adapt Your Bake

Vegan & Gluten-Free Plantain Cake Variations

This indulgent plantain celebration cake can be adapted for different dietary preferences while retaining its signature caramelised flavour, moist texture and elegant presentation.

VEGAN Plant-Based Variation

Vegan Plantain, Salted Caramel & Pecan Cake

Replace dairy butter with a good-quality vegan block butter suitable for baking and substitute whole milk with unsweetened oat, almond or coconut milk.

Use a reliable vegan egg replacement formulated for cakes. For the filling, choose vegan mascarpone or plant-based cream cheese combined with a plant-based whipping cream.

Prepare the salted plantain caramel using vegan butter and a rich plant-based cream. Coconut cream works especially well because its subtle tropical character naturally complements ripe plantain.

Chef’s tip: Chill the vegan filling thoroughly before assembling the cake for cleaner, more stable layers.
GLUTEN FREE Cake-Friendly Variation

Gluten-Free Plantain Celebration Cake

Replace the self-raising flour with the same quantity of a good-quality gluten-free self-raising flour blend developed specifically for cakes.

If your chosen flour does not already contain xanthan gum, approximately ½ teaspoon can help improve structure and reduce excessive crumbling.

Ground almonds already contribute moisture and tenderness, making this ripe plantain cake particularly suitable for gluten-free adaptation.

Chef’s tip: Allow gluten-free cake layers to cool completely before moving or assembling them.
Serve with Style

Turn Every Slice into a Restaurant-Style Dessert

This plantain cake makes an impressive centrepiece, but individual presentation can elevate it even further for dinner parties, weddings and special celebrations.

01 Plate Beautifully

Michelin-Inspired Presentation

Place a slender cake slice slightly off-centre on a large porcelain plate. Add a small sweep of warm salted plantain caramel and a scattering of pecan praline crumb.

Finish with one glossy caramelised plantain slice and a slender praline shard for height. A tiny touch of edible gold leaf adds an elegant celebration finish.

02 Pair Thoughtfully

Perfect Dessert Pairings

Serve with a small quenelle of vanilla-bean ice cream for a beautiful contrast of temperature and texture.

Fresh espresso, black coffee, vanilla tea or aromatic spiced chai pairs wonderfully with the caramelised plantain, brown butter and toasted pecans.

Serving Suggestions

Serve this Michelin-Star Mediterranean Falafel Brioche Roll immediately after assembly, while the La Boulangerie Vegan Brioche Style Hot Dog Roll is warm, lightly toasted and beautifully soft inside. The contrast between the golden brioche, crisp falafel, silky whipped vegan feta and slow-cooked Provençal ratatouille is at its best when the dish is served fresh.

For a complete restaurant-quality meal, pair the brioche roll with rosemary sea-salt triple-cooked fries, sweet potato fries, crispy polenta chips or roasted baby potatoes finished with garlic and fresh herbs. For a lighter option, serve it with a vibrant Mediterranean tomato, cucumber and red onion salad. Alternatively, offer grilled courgettes, roasted peppers, asparagus or charred tenderstem broccoli.

A small side of lemon-dressed rocket, shaved fennel and apple also works beautifully, adding freshness and acidity to balance the richness of the brioche and whipped vegan feta. For extra flavour, serve with a ramekin of roasted red pepper coulis, basil pistou or smoked garlic aioli for dipping.

For an elegant Michelin-style presentation, place the roll slightly off-centre on a handcrafted ceramic or dark stoneware plate. Arrange the fries or salad neatly alongside and finish the plate with small dots of basil pistou and roasted red pepper coulis. Moreover, garnish with fresh micro herbs, basil leaves, edible flowers, candied pine nuts, crispy capers and a light grating of lemon zest.

A wedge of charred lemon adds visual appeal and allows guests to brighten the dish to taste. A final drizzle of premium extra virgin olive oil just before serving will enhance the Mediterranean aromas and give the dish a polished restaurant-style finish.

For wedding catering or large events, prepare the ratatouille, whipped vegan feta, roasted pepper coulis and basil pistou in advance. Toast the brioche rolls and cook the falafel as close to service as possible. Then assemble each roll just before serving to maintain the best texture and presentation.

For buffet service, present the rolls on wooden boards or slate platters with bowls of extra pistou, coulis, pickled vegetables and fresh herbs. Mini versions can also be created using smaller brioche rolls. These are ideal for canapés, cocktail receptions and tasting menus.

Pair this dish with a chilled glass of Provence Rosé, Vermentino, Sauvignon Blanc, Albariño or a light Italian Pinot Grigio. For a non-alcoholic option, serve with a sparkling elderflower and lemon cooler, pomegranate spritz, cucumber and mint tonic or Mediterranean citrus soda.

To complete the meal, follow with a light vegan dessert such as lemon and elderflower panna cotta, coconut sorbet, fresh berry tart or grilled peaches with pistachio crumble.

Ingredients

Pea Purée

Champagne Beurre Blanc

Garnish

  • Pea shoots
  • Bronze fennel
  • Chive oil
  • Edible flowers
  • Lemon zest
  • Micro herbs

Instructions

Prepare the Velouté

  • Cook the shallot and garlic gently in butter.
  • Add cauliflower, saffron and vegetable stock.
  • Simmer until completely tender.
  • Blend until silky smooth.
  • Finish with cream and pass through a fine sieve. Keep warm.

Make the Pea Purée

  • Cook peas for 2 minutes.
  • Refresh immediately in iced water.
  • Blend with butter and mint until vibrant green.
  • Pass through a sieve. Season lightly.

Prepare the Monkfish

  • Pat the monkfish dry.
  • Season lightly with white pepper.
  • Wrap each fillet completely with overlapping slices of San Michele Speck. Refrigerate for 15 minutes.

Cook the Fish

  • Heat olive oil in a heavy pan.
  • Sear each wrapped fillet until the speck becomes crisp and golden.
  • Transfer to a 180°C oven for 6–8 minutes.
  • Rest for 5 minutes

Char the Leeks

  • Blanch baby leeks.
  • Sear in butter until caramelised and lightly charred. Season with sea salt.

Champagne Beurre Blanc

  • Reduce Champagne, vinegar and shallots until almost dry.
  • Whisk in cold butter one cube at a time. Add a splash of cream for stability.
  • Finish with lemon juice. Do not boil.

Michelin-Style Plating

  • Spread a smooth crescent of saffron cauliflower velouté across one side of a warm plate.
  • Pipe three elegant dots of pea purée.
  • Slice the speck-wrapped monkfish into thick medallions and arrange neatly on the velouté.
  • Place charred baby leeks alongside for height.
  • Spoon Champagne beurre blanc delicately around the fish.
  • Finish with chive oil, edible flowers, bronze fennel, pea shoots and finely grated lemon zest.

Notes

For the best results, ask your fishmonger to trim the monkfish into evenly sized fillets. This helps the fish cook uniformly and creates an elegant presentation.
Bring the monkfish to room temperature for 15–20 minutes before cooking. This promotes even cooking and prevents the centre from remaining undercooked while the speck crisps.
Wrap the San Michele Speck tightly around the fish with a slight overlap. As it cooks, the speck will become beautifully crisp while naturally basting the monkfish, keeping it moist and tender.
Avoid adding too much salt before cooking, as the speck already contributes a savoury, lightly salted flavour.
The Champagne beurre blanc should be prepared over low heat and never allowed to boil after the butter has been incorporated, otherwise the sauce may split.
For an authentic Michelin-style finish, warm your serving plates before plating. This keeps the sauces silky and the fish at the perfect serving temperature.
If fresh saffron is unavailable, use high-quality saffron threads rather than powdered saffron for a cleaner flavour and vibrant golden colour.
Fresh micro herbs, bronze fennel and edible flowers should be added just before serving to preserve their freshness and visual appeal.
Vegan Version
Transform this recipe into an elegant plant-based dish by replacing the monkfish with thick slices of king oyster mushrooms, roasted celeriac steaks, or pressed extra-firm tofu.
Instead of San Michele Speck, wrap the vegetable or tofu with thin ribbons of smoked aubergine, smoked carrot, or a layer of marinated rice paper brushed with smoked paprika and olive oil to recreate a delicate smoky flavour.
Replace the butter, cream and Parmesan with high-quality vegan alternatives:
  • Use vegan butter for the velouté and beurre blanc.
Replace double cream with oat or soy cream.
Use nutritional yeast or a vegan Parmesan alternative to add savoury depth.
Prepare the beurre blanc using vegan butter and sparkling wine for a rich, silky sauce without dairy.
Finish with toasted hazelnuts or roasted pumpkin seeds for additional texture and a satisfying crunch.
The result is a sophisticated, restaurant-quality vegan main course with creamy sauces, vibrant vegetables and balanced smoky, earthy and citrus flavours.

Ingredients

Scallops

Pineapple Carpaccio

Citrus Herb Oil

Summer Garnish

Prepare the Pineapple Carpaccio

Instructions

Prepare the Pineapple Carpaccio

  • Using a mandoline, slice the pineapple into paper-thin rounds.
  • Arrange on a tray.
  • Brush lightly with lime juice and honey.
  • Refrigerate until needed.

Make the Coconut Foam

  • Blend fresh coconut flesh, coconut milk, coconut water and sea salt until smooth.
  • Strain through a fine sieve.
  • Transfer to a foam siphon and charge, or whisk vigorously before serving.
  • Chill thoroughly.

Prepare the Herb Oil

  • Blend olive oil, basil, coriander and lime zest
  • Strain until vibrant green.

Sear the Scallops

  • Pat scallops completely dry.
  • Season lightly.
  • Heat olive oil in a very hot pan.
  • Sear scallops: 90 seconds on one side & 60 seconds on the other. They should be golden outside and tender inside

Michelin-Star Plating

  • Arrange pineapple carpaccio elegantly across the plate.
  • Position three scallops per serving.
  • Spoon coconut foam around the scallops.
  • Dot citrus herb oil artistically around the plate.
  • Garnish with:
    – Fresh coconut ribbons
    – Finger lime pearls
    – Micro herbs
    – Edible flowers
    – Baby basil leaves

Notes

For the finest results, use the freshest king scallops available and ensure they are thoroughly dried before searing. Removing excess moisture allows the scallops to develop a beautiful golden crust while remaining tender and succulent inside. Fresh young coconut is highly recommended for this recipe, as its naturally sweet flesh and refreshing coconut water create a lighter, cleaner flavour that perfectly complements the delicate seafood and tropical garnishes.
When preparing the pineapple carpaccio, slice the fruit as thinly as possible using a mandoline to achieve an elegant restaurant-quality presentation. Chilling the pineapple, coconut foam, serving plates, and garnishes before plating helps maintain freshness and enhances the overall dining experience, especially during warm summer months.
The citrus herb oil should be strained carefully to achieve a vibrant green colour and silky texture. This small step elevates the dish visually and creates the polished finish expected in Michelin-inspired cuisine. For a truly luxurious presentation, garnish with finger lime pearls, edible flowers, micro herbs, and delicate coconut ribbons immediately before serving.
Gluten-Free Version
This recipe is naturally gluten-free when prepared with certified gluten-free ingredients. Always check ingredient labels, particularly for prepared stocks and garnishes, if serving guests with coeliac disease or gluten sensitivities.
Vegan Version
For an elegant plant-based adaptation, replace the king scallops with thick medallions of king oyster mushrooms, grilled hearts of palm, or roasted oyster mushrooms. These alternatives provide a similar texture and absorb the tropical flavours beautifully. The fresh coconut foam, pineapple carpaccio, citrus herb oil, finger lime pearls, and garnishes can remain unchanged, creating a sophisticated vegan fine-dining dish that is light, refreshing, and visually stunning.
Serving Tip
Serve immediately after plating to preserve the delicate texture of the scallops, the freshness of the coconut foam, and the vibrant appearance of the tropical garnishes. This dish is ideal for summer entertaining, luxury tasting menus, garden parties, and special occasion dining.

Therefore, this elegant dish delivers exceptional flavour while providing valuable nutrients that support a balanced lifestyle.

They also provide important nutrients including vitamin B12, selenium, zinc, and iodine, which contribute to normal energy metabolism, immune function, and thyroid health. Its natural richness allows chefs to create luxurious textures without relying heavily on processed ingredients.

Pineapple provides vitamin C, antioxidants, and natural enzymes, adding freshness and brightness to the dish while supporting overall wellbeing. As a starter, pair this dish with fresh artisan bread, olive oil, and a light Mediterranean salad featuring rocket, cucumber, avocado, and citrus segments. Importantly, the bright flavours of the salad complement the sweetness of the scallops and tropical fruit. They do so without overwhelming the delicate balance of the dish.

For a more substantial main course, serve alongside grilled asparagus, charred tenderstem broccoli, baby courgettes, or roasted heritage carrots. The natural sweetness of these vegetables pairs wonderfully with the coconut and pineapple elements. At the same time, they maintain the refined character of the recipe.

This dish also works beautifully as part of a Michelin-inspired tasting menu. Consider serving it after a chilled gazpacho or cucumber soup and before a delicate fish course such as sea bass, halibut, or turbot. For guests who prefer alcohol-free options, consider:

  • Lime and mint sparkling water
  • Coconut and pineapple cooler
  • Passion fruit spritzer
  • Cucumber and basil tonic
  • Fresh citrus mocktail

These refreshing beverages mirror the tropical and citrus flavours found within the recipe.

Luxury Entertaining Presentation

When serving for a dinner party or special event, finish the dish just before it reaches the table. Add fresh coconut ribbons, finger lime pearls, edible flowers, micro basil, and delicate droplets of citrus herb oil at the last moment to preserve their vibrant appearance.

For an extra touch of elegance, place the scallops slightly off-centre and create height with the coconut foam and garnishes. This modern plating technique instantly creates the visual impact associated with Michelin-starred restaurants.

  • Chilled cucumber and mint gazpacho

Pan-seared king scallops with crispy Prosciutto Crudo, cauliflower purée, apple gel and hazelnut crumb, beautifully plated in a Michelin-style presentation by Nicol Retailer Limited.

Elevate Your Home Dining Experience with a Restaurant-Quality Seafood Starter

Few dishes embody fine dining quite like perfectly pan-seared king scallops. Their natural sweetness, delicate texture, and elegant presentation have made them a favourite among Michelin-starred chefs and food enthusiasts alike. When paired with premium Prosciutto Crudo, silky cauliflower purée, or tart apple gel, their appeal increases. Experience the art of fine dining at home with this Michelin-inspired Pan-Seared Scallops recipe. It combines perfectly caramelised king scallops with crispy Prosciutto Crudo, silky cauliflower purée, vibrant apple gel, and toasted hazelnut crumb. Consequently, this elegant starter delivers a sophisticated balance of flavours and textures worthy of a luxury restaurant menu.

The natural sweetness of fresh scallops pairs beautifully with the delicate savoury notes of Prosciutto Crudo. Meanwhile, the creamy cauliflower purée and refreshing apple gel provide depth, richness, and balance. Finished with a crunchy hazelnut crumb, every element has been carefully crafted to create a memorable dining experience.

Why King Scallops Are a Fine Dining Favourite

King scallops are prized for their naturally sweet flavour and tender texture. Their ability to develop a beautiful caramelised crust while remaining succulent inside makes them one of the most versatile seafood ingredients in fine dining cuisine. When properly cooked, scallops offer:

  • Delicate sweetness
  • Tender, buttery texture
  • High protein content
  • Low carbohydrate content
  • Excellent source of Vitamin B12
  • Rich source of selenium and omega-3 fatty acids

Their subtle flavour profile allows them to pair beautifully with both rich and acidic ingredients. This quality makes them ideal for sophisticated dishes such as this one.

The Perfect Partnership: Prosciutto Crudo and Scallops

One of the secrets behind many Michelin-starred dishes is balancing contrasting flavours. The sweet, delicate nature of king scallops works exceptionally well alongside the savoury complexity of Prosciutto Crudo.

Premium Prosciutto Crudo undergoes a traditional curing process that concentrates flavour while preserving its delicate texture. When crisped, it adds a satisfying crunch and umami-rich depth that enhances the scallops without overpowering them. The combination creates a harmonious balance of:

  • Sweetness from the scallops
  • Savoury richness from the Prosciutto Crudo
  • Creaminess from the cauliflower purée
  • Acidity from the apple gel
  • Crunch from the hazelnut crumb

Every element contributes to a carefully crafted dining experience.

Instructions

Prepare the Puff Pastry

  • Preheat oven to 200°C
  • Place pastry on lined baking tray
  • Score a border around the edges
  • Brush with egg wash
  • This creates a beautifully raised crust.

Roast the Beetroot

  • Wrap beetroot in foil and roast for 45–50 minutes until tender
  • Peel and slice thinly
  • Roasting intensifies natural sweetness.

Assemble the Tart

  • Arrange beetroot slices elegantly across pastry
  • Drizzle lightly with olive oil
  • Season with salt and pepper
  • Bake for 20–25 minutes until golden and crisp

Prepare the Pistachio Crumb

  • Toast pistachios, breadcrumbs, and olive oil in a pan until golden
  • Adds Michelin-style texture and crunch.

Finish the Tart

  • Tear burrata over the warm tart
  • Drizzle generously with De Nigris Balsamic Glaze
  • Scatter pistachio crumb and thyme

Plating (Mitchelle Star Style)

  • Slice tart into elegant portions
  • Add extra burrata for softness and height
  • Finish with:
    – Additional balsamic glaze drizzle
    – Micro herbs
    – Edible flowers
    – Fresh cracked pepper

Notes

For the best Michelin-style results, roast the beetroot slowly to intensify its natural sweetness and achieve a rich, earthy flavour without excess moisture. Allow the roasted beetroot to cool slightly before slicing to maintain clean, elegant layers across the tart. To achieve a perfectly crisp pastry base, avoid overcrowding the tart with toppings and bake on a preheated tray for extra golden crispness.
Add the burrata just before serving so it stays creamy, soft, and luxurious against the warm tart. Finish with the De Nigris Balsamic Glaze in delicate drizzles rather than heavy pours to create balance, visual elegance, and a glossy gourmet finish. Toasting the pistachio crumb lightly before serving enhances its nutty aroma and provides the perfect crunchy contrast to the creamy burrata and soft beetroot.
For a gluten-free version, simply replace the standard puff pastry with certified gluten-free puff pastry and use gluten-free breadcrumbs for the pistachio crumb. Always check that all additional ingredients, including balsamic glaze and seasonings, are certified gluten-free to ensure the dish remains fully suitable for gluten-free dining while still delivering a luxurious fine-dining experience.

Serving Suggestions

This luxurious Burrata & Balsamic Glazed Beetroot Tart with Pistachio Crumb is incredibly versatile and perfect for both elegant entertaining and refined everyday dining. For best results, serve the tart warm to allow the creamy burrata to soften slightly over the crisp puff pastry. This creates a rich and indulgent texture in every bite.

For a beautifully balanced meal, pair the tart with a fresh rocket salad dressed in lemon and olive oil. This helps to cut through the richness of the burrata and balsamic glaze while adding peppery freshness. Alternatively, roasted asparagus, honey-glazed carrots, or truffle fries also complement the earthy beetroot and nutty pistachio flavours perfectly.

Sparkling water with citrus or botanical mocktails offer elegant non-alcoholic alternatives. For premium presentation, finish the tart with additional micro herbs, edible flowers, cracked black pepper, and a final delicate drizzle of De Nigris Balsamic Glaze just before serving.

Whether enjoyed as a gourmet vegetarian main course, elegant brunch centrepiece, luxury starter, or sophisticated dinner party dish, this tart delivers a visually stunning and flavour-packed fine-dining experience that is guaranteed to impress guests and food lovers alike.

This Burrata & Balsamic Glazed Beetroot Tart with Pistachio Crumb proves that vegetarian cooking can be every bit as luxurious, elegant, and indulgent as fine-dining restaurant cuisine. Combining roasted beetroot, creamy burrata, crunchy pistachios, and rich balsamic glaze, this recipe creates an unforgettable balance of flavour, texture, and presentation.

Whether you’re entertaining guests or simply treating yourself to a gourmet experience at home, this Michelin-inspired tart is guaranteed to impress.
