Instructions

Sauté the Aromatics

  • Heat olive oil or butter in a large pan.
  • Add diced onion and cook gently for 3–4 minutes until soft.
  • Add garlic and cook for 30 seconds until fragrant.

Toast the Risotto Base

  • Add Gallo Pronto Saffron Risotto Base to the pan.
  • Stir for 1 minute to warm and coat in the aromatics.

Deglaze with Wine

  • Pour in the white wine.
  • Let it bubble away for 1–2 minutes until reduced.

Add Stock & Simmer

  • Gradually add the hot stock, stirring occasionally.
  • Simmer for 12–15 minutes until creamy and al dente.

Finish with Lemon Butter & Parmesan

  • Turn off the heat.
  • Stir in cold butter cubes, lemon zest and grated parmesan.
  • Let the risotto rest for 1 minute to become extra silky.

Serve

  • Plate immediately while hot, topped with fresh herbs, parmesan shavings and extra lemon zest.

Notes

Use hot stock for best results — adding cold liquid can tighten the starch and prevent the risotto from becoming silky and creamy.
Don’t over-stir — gentle, occasional stirring helps the rice release just enough starch without becoming gluey.
Add butter at the end — stirring in cold butter creates a glossy, restaurant-style finish.
White wine adds depth, but you can replace it with extra stock if you prefer alcohol-free.
