Instructions

Prepare the truffle Béchamel.

  • Melt the butter over a medium heat.
  • Whisk in the flour and cook for one minute.
  • Gradually add the milk until smooth.
  • Cook until thickened.
  • Stir in the Parmesan, truffle oil, nutmeg, salt and white pepper.

Prepare sourdough slices

  • Lightly butter the sourdough slices.
  • Toast gently until lightly golden.
  • Spread Dijon mustard on one side.
  • Layer generously with: Coppa, Speck , Napoli Salami, Bresaola and Salame Ventricina
  • Top with Gruyère and Mozzarella.
  • Finish with torn Burrata.
  • Close the sandwich.
  • Spread a generous layer of warm truffle Béchamel over the top.
  • Sprinkle with Gruyère and Parmigiano.
  • Bake at 200°C for 10–12 minutes. Finish under a hot grill for 2–3 minutes until bubbling, golden and beautifully caramelised.
  • Finish with: Parmesan shavings, burrata pieces, toasted pine nuts, fresh basil, micro herbs, balsamic glaze, extra virgin olive oil and cracked black pepper

  • Serve the Croque Monsieur slightly off-centre on a warm stoneware plate.
  • Accompany with:
    Burrata and heritage tomato salad
    Rocket dressed with lemon oil
    Pickled shallots
    Crispy Parmesan tuile

Vegan Variation
For a plant-based version, replace the cured meats with vegan deli slices, smoked tofu, roasted aubergine, peppers, mushrooms or sun-dried tomatoes. Use vegan mozzarella, plant-based Burrata, vegan Parmesan, dairy-free butter and unsweetened oat or soy milk.
Prepare the Béchamel with plant-based butter, flour and dairy-free milk, then finish with basil, rocket, toasted pine nuts, truffle oil and balsamic glaze.
Gluten-Free Variation
Replace the artisan sourdough with certified gluten-free bread and use gluten-free plain flour for the Béchamel. Check that the Dijon mustard, cured meats, cheeses and other prepared ingredients are labelled gluten-free.
Vegan and Gluten-Free Variation
