Roast the plantain: Preheat the oven to 200°C / 180°C fan. Place the sliced plantain on a lined baking tray with the butter, dark brown sugar, vanilla, cinnamon and sea salt. Roast for 15–20 minutes until deeply golden, soft and caramelised. Blend until smooth and allow to cool.
Brown the butter: Place the 200g butter for the sponge in a saucepan over medium heat. Allow it to melt and foam until the milk solids turn golden brown and develop a toasted, nutty aroma. Remove immediately from the heat and cool slightly.
Prepare the cake tins: Reduce the oven to 180°C / 160°C fan. Grease and line two 20cm round cake tins.
Make the sponge: Whisk the light brown sugar with the cooled brown butter. Beat in the eggs one at a time, then mix in 250g cooled plantain purée and the vanilla.
Combine the self-raising flour, ground almonds, baking powder, cinnamon, nutmeg and salt. Fold gently into the wet mixture, alternating with the milk. Divide evenly between the prepared tins.
Bake: Bake for 30–35 minutes, or until risen and a skewer inserted into the centre comes out clean. Cool in the tins briefly, then transfer to a wire rack and cool completely.
Make the pecan praline: Toast the pecans at 180°C for 6–8 minutes. Melt the caster sugar in a saucepan until deep amber. Add the toasted pecans and sea salt, then immediately pour onto baking parchment. Cool completely. Break some into decorative shards and crush the remainder into coarse praline crumbs.
Make the salted plantain caramel: Melt the caster sugar in a heavy saucepan until amber. Carefully add the warm cream. Whisk in the butter, plantain purée, vanilla and sea salt. Cook briefly until smooth and glossy, then allow to cool.
Prepare the mascarpone filling: Whisk the mascarpone, double cream, icing sugar and vanilla bean paste until smooth and thick enough to hold soft peaks. Do not over-whip. Keep chilled until required.
Caramelise the topping: Melt the butter and dark brown sugar in a frying pan. Add the diagonally sliced plantain and cook for 1–2 minutes on each side until deeply golden and glossy. Add the vanilla, remove from the heat and cool.
Assemble: Place the first sponge on a cake stand. Spread with a generous layer of vanilla mascarpone, drizzle lightly with salted plantain caramel and scatter with pecan praline crumb. Position the second sponge on top.
Spread mascarpone across the top, leaving the sides semi-naked for a contemporary finish. Arrange the caramelised plantain slices in a sweeping crescent, drizzle with plantain caramel and add pecan praline shards for height. Finish with crushed praline and optional edible gold leaf.
