Ingredients

For the Hot Dogs

  • 4 hot dog buns

  • Optional Toppings and Accompaniments:- Grated cheddar cheese- Chopped fresh coriander- Sour cream or Greek yoghurt- Sliced avocado- Lime wedges

Instructions

Prepare the Bean Chili

  • Heat olive oil in a large pan over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
  • Stir in the minced garlic, tomato puree and chopped red bell pepper. Cook for an additional 2-3minutes until the peppers are tender.
  • Add the kidney beans, black beans, and diced tomatoes to the pan. Stir in the chili powder and cumin. Season with salt and pepper to taste.
  • Lower the heat and let the chili simmer for 15-20 minutes, stirring occasionally, until the chilli thickens and the flavours meld together.

Assemble the Hot Dogs

  • While the chilli is simmering, grill or fry the sausages until they are cooked through and slightly crispy on the outside.
  • Place each cooked sausage in a bun. Generously spoon the bean chilli over each sausage.
  • Add your chosen toppings and accompaniments to finish off your masterpiece
