Instructions

Caramelised Onion Jam

  • Cook onions in olive oil and butter over low heat for 20–25 minutes until soft and golden. Add sugar and balsamic vinegar, cook until sticky and jam-like. Set aside.

Truffle Mustard Aioli

  • Mix all ingredients until smooth. Chill for 10 minutes to allow flavours to develop.

Crispy Shallots

  • Fry sliced shallots in hot oil until golden and crisp. Drain on kitchen paper and lightly salt.

Quick Pickles

  • Combine cucumber with vinegar, sugar, and salt. Leave for at least 10 minutes.

Cook the Hot Dogs

  • Gently heat the Westlers Jumbo Hot Dogs in simmering water (do not boil) for 5–7 minutes to keep them juicy and tender.

Toast the Buns

  • Lightly toast brioche buns in a pan with a touch of butter until golden.

Assembly (Michelin Presentation)

  • Spread a thin layer of truffle mustard aioli inside the bun
  • Place the hot dog neatly in the centre
  • Add a refined line of caramelised onion jam along the top
  • Arrange pickled cucumber ribbons elegantly
  • Sprinkle crispy shallots for texture
  • Finish with microgreens and a light crack of black pepper

Notes

For the best results, use high-quality brioche-style buns and premium jumbo hot dogs to achieve a rich, balanced flavour and soft yet structured texture. Gently heat the hot dogs rather than boiling vigorously to keep them juicy and tender. Toasting the buns lightly enhances flavour and prevents sogginess when adding toppings.
The key to this dish is balance—sweet caramelised onions, tangy pickles, creamy aioli, and crispy shallots create a layered, restaurant-quality experience. Avoid overloading the bun to maintain a clean, refined presentation.
Gluten-Free Option
This recipe can easily be made gluten-free with a few simple swaps:
  • Use certified gluten-free hot dog buns
  • Ensure all condiments (mustard, mayonnaise, stock, and vinegar) are gluten-free
  • Replace crispy shallots with gluten-free fried onions or homemade baked shallots
This allows you to enjoy the same gourmet experience without compromising on taste or texture.
Vegan Option
To create a delicious vegan version:
  • Replace jumbo hot dogs with high-quality plant-based sausages
  • Use vegan mayonnaise for the aioli
  • Swap butter for olive oil in the onion jam
  • Ensure all ingredients (mustard, sugar, vinegar) are vegan-friendly
For added depth and protein, consider topping with grilled mushrooms, roasted peppers, or seasoned chickpeas. The result is a rich, flavour-packed vegan gourmet hot dog that’s just as indulgent and satisfying.
