Cook the Rice - Rinse the rice under cold water until the water runs clear. Drain and place in a rice cooker with 2 cups of water. Cook according to the rice cooker's instructions.
Cook the Beef
In a bowl, mix the soy sauce, mirin, sake, and sugar. Stir until the sugar dissolves.
Prepare the Beef In a large pan, heat a bit of oil over medium heat. Add the onion and cook until soft and translucent.
Add the beef slices to the pan with the onions and pour over the sauce mixture. Cook for about 3-5 minutes, stirring occasionally, until the beef is just cooked through.
Cook the Egg
In a separate pan, gently fry the eggs sunny side up until the whites are set but the yolks remain runny.
Toasting the Sesame Seeds
Place the sesame seeds in a frying pan over medium heat, heat raw sesame seeds until golden brown and fragrant, stirring occasionally with a wooden spoon. Remove from heat and immediately transfer to a plate to cool completely
Assemble the Donburi
Divide the cooked rice among four bowls. Top each with the beef and onion mixture.
Place a fried egg on top of each bowl.
Sprinkle with chopped spring onions and the toasted sesame Seeds.
Serve with pickled ginger on the side ( optional).
