Instructions
In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant
Pour in the chicken or vegetable stock, bringing it to a gentle boil. Stir in the soy sauce and miso paste until fully dissolved
Add the ramen noodles to the pot and cook according to the package instructions ,usually around 3-4 minutes
Introduce the cooked chicken or tofu, mushrooms, and spinach or pak choi to the pot. Allow them to heat through for another 2-3 minutes.
Taste the broth and adjust seasoning with salt and pepper as needed.
Divide the noodles and broth between two bowls. Top each bowl with a soft-boiled egg, halved. Garnish with spring onions and any additional toppings you prefer such as nori sheets, sesame seeds, or chilli flakes.
